Chicken Lettuce Wraps

This is a recipe that has so much potential for variation… of ingredients and wine! You’ll notice only the Kick Ass sauce has measurements. Put in more of what you love and less of what you don’t.

Ingredients:

  • 1 package boneless, skinless chicken thighs (4 or so, or use breasts)
  • Boston Bibb lettuce
  • chopped peanuts
  • chow mein noodles
  • sliced green onion
  • chopped cilantro
  • fresh lime sliced paper thin – trim rind if too thick

Marinade for chicken:

  • soy sauce
  • brown sugar
  • rice wine vinegar

Kick Ass Sauce:

  • 1/8 C brown sugar
  • 1/8 C sugar
  • 2 T soy sauce
  • 2 T rice vinegar
  • 2 T ketchup
  • 1 T fresh lemon juice
  • 1/8 t sesame oil
  • 1 T Dijon mustard
  • Decent squirt of Sriracha (we use a lot)

Dice the chicken. Marinate chicken pieces for at least a couple hours. Stir fry in a hot wok with about 1 T of oil until cooked through.

Prep the rest of the ingredients and put in individual bowls so everyone dining can make their own. When ready, put desired ingredients in a lettuce cup, top with the Kick Ass sauce and eat!

* Variations: use beef instead of chicken, finely dice the meat for individual appetizer portions, add match stick carrots, garlic, mushrooms, freshly sliced ginger, etc.
